This Japanese-style tonkatsu schnitzel has great teriyaki flavours and is topped with plenty of bonito flakes and furikake for an authentic oishii experience.

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Schnitzel

    • Combine furikake with panko crumbs.
    • Butterfly the chicken breast fillets and prepare with a meat mallet.
    • Crumb the chicken with seasoned flour, eggs, and furikake crumbs in that order.
    • Cover and refrigerate for 20 minutes.
    • Fry until golden and cooked through. Drain.
  3. Slaw

    • Whisk together rice wine vinegar, HELLMANN'S Real Mayonnaise and 150 ml of water until smooth.
    • Fold through cabbage, onions, and ginger. Set aside.
  4. Teriyaki Gravy

    • Combine KNORR Golden Roast Gravy with 500 ml of boiling water.
    • Stir through KNORR Japanese Teriyaki Sauce, whisking until well combined.
    • Remove from heat and keep warm.
  5. To Serve

    • Plate the schnitzel and spoon over the teriyaki gravy.
    • Top generously with bonito flakes and extra furikake.
    • Serve with slaw and steamed greens.
  6. Chef's Tip

    • Furikake is a Japanese seasoning made of crushed nori or seaweed, bonito flakes, and sesame seeds. You can easily find it at Asian supermarkets or food distributors.
